Paris proposes to have two vegetarian meals per week, and one vegetarian option for each of its three collective restaurants. This is a far-fetched goal for PS Anne Hidalgo's environmental supporters.

"The goal is 40% vegetarian food at Parisian collective catering," Audrey Pulvar explained to Audrey Pulvar (PS and family) who will present her five-year plan.

These 1,300 Parisian canteens are managed by 21 managers (schools, solidarity restaurants, nursing homes and city staff). Pulvar explains that while these canteens serve 30 million meals per year, not all of them are at the same level. This measure should be implemented by elected environmentalists starting in 2023.

The former journalist replies, "The sooner they get there, it's the better." This measure has three objectives: "To reduce the City’s carbon footprint", to better respect diversity and "create financial flexibility so that managers can purchase higher quality meat meals".
