Soft, sweet and juicy - that's what Anastasia's pancakes from her Ukrainian homeland taste like. Whenever she is particularly homesick, she prepares the elastic pancakes with a quark filling and she feels a little better.

I've been in Berlin for over half a year now. My son is now going to school, I've found an apartment and my German is getting better. I can definitely say that I feel at home in my new home and that I am happy about what happened to me here. But of course my old homeland, the Ukraine, won't let me go! Of course I miss my people, my apartment, my job, my things. I am very worried about my family, who are still there and are defying the dangers of this inhumane war on a daily basis.

If I don't know what to do anymore, I cook my family recipes, that gives me a secure feeling. Today there are nalistniki: These are fine, elastic pancakes that are filled with quark, first fried in a pan and then baked in the oven.

preparation

The ingredients for the pancakes and the filling should all be at room temperature. So first put the flour, sugar and eggs in a bowl, mix a little and slowly add the milk, continue to stir, preferably with a mixer.

Then add the vegetable oil, carefully mix into the batter with a whisk. Slowly add the water, mix. The dough must now rest for half an hour.

Grease the pan with some vegetable oil or butter and heat it, put a dollop of batter in the hot pan and move the pan so that the batter spreads evenly and thinly.

Fry the nalistniki, one at a time, on one side over medium-high heat until they turn light yellow.

The pancakes are a bit thinner than regular pancakes, but they are also much more elastic due to the large amount of vegetable oil.

While the dough is resting, pour boiling water over the raisins and let them soak for 5 minutes, then discard the rest of the water.

Using a fork, mix the cottage cheese or quark with the egg and sugar until it becomes crumbly in larger chunks, then add the raisins.

Place the finished pancakes on a greased baking sheet or in a casserole, add the filling and roll. Spread small knobs of butter on each roll.

If you like, you can also sprinkle some sugar over the rolls or cut them in half. If you don't like raisins, simply leave them out and add a pinch of vanilla to the filling instead.

Then put the mold in the oven preheated to 180 degrees and let it bake for 20 minutes. If you like, you can garnish the nalistniki with some sour cream, yoghurt, fruit or jam.
