Rostock (dpa/mv) - The State Office for Food Safety considers the consumption of sausage with wild liver content to be harmless according to appropriate studies. "We could not find any undesirable contamination in wild liver products," said Stephan Goltermann, Director of the State Office for Agriculture, Food Safety and Fisheries (LALLF) in Rostock, on Wednesday. According to the LALLF, ten wild liver products from the trade in Mecklenburg-Vorpommern were examined this year.
For example, heavy metals or residues of pesticides were checked. Deer, especially wild boar, accumulate certain organic compounds and heavy metals when they eat. These accumulated primarily in the innards of the animals, such as the liver and kidneys. Another factor is the use of lead ammunition when hunting. However, the trend here is towards lead-free ammunition.
"In venison sausage, lower proportions of venison liver are usually used, so that there is a kind of dilution effect of any contamination present in the innards," explained Goltermann. Even according to the results of these investigations, nothing stands in the way of enjoyment.
